I am looking for a pamphlet on AIDS and HIV prevention, written specifically for prisoners as an audience. There must be some organization (or multiple ones) working on HIV education and prevention for prisoners, which has produced such a thing.

I too would be interested in such a thing. I know of a booklet written several years ago - heard it featured on This American Life - that was geared toward young men about to enter prison for the first time, which included information about sex. Sorry I can't be more precise.
